Excess Strawberries

As I said before, I had way too many strawberries. After making jam, I still had enough strawberries to make a few other recipes. And I’m also here to share them (in short) with you.

Strawberry Cake:


My first endeavor was strawberry cake. You can find the recipe here. It’s a really quick and easy recipe to make, and it’s great alone or served with whipped cream or ice cream. The thing to remember when making this cake is not to be shy about shoving the strawberries in the top. Really crowd them in as much as possible.

Strawberry and Cream Biscuits:


My next recipe was Strawberry and Cream Biscuits. They’re divine. I made them for breakfast, but they’d make a solid dessert as well. You can find the recipe here. This recipe is great because it actually benefits from the use of strawberries that are on their way to rotten. I picked out all the strawberries that were going bad and used them for this recipe.

Strawberry Hand Pies:


Yes, this photo is from Instagram. I don’t have a recipe for these babies because I used my mom’s pie crust recipe and threw together the filling using just strawberries, sugar and vanilla extract. I didn’t measure anything. However, I promise that I’ll make hand pies again and give you all a recipe. Just wait for it.

If you can believe it, I still had strawberries after this. I decided to just freeze them for use in smoothies because they were going bad fast. Lesson learned: Don’t buy 16 quarts of strawberries.
